My Comfort Food On a Cooling Saturday Afternoon

The weather these few days are so unpredictable heavy rain & extremely hot weather a lazy cooling afternoon like this makes me want to cook this that my mum has been cooking for me since young of course as an adult now our taste buds tends to get heavier and this was what i cooked and the memories of my mum cooking this invading my senses...


Porridge with carrots,spinach and salted egg
top with stir fry spicy bean paste chicken slices with ginger
Most of you seeing this will know that this is what mothers always cook for their children till they get to the age when they get tired of it but i don't in fact i love it more so call me a big baby as my mum always says..hehe

There isn't any recipe for these i cooked this using soft bone pork ribs stock a little light soya sauce to taste just a little as the salted egg is already with salted taste and the stock is also full of flavor the choice is yours for the ingredients my first choice is always spinach and carrot.

I used chicken breast marinated with light soya sauce,pepper,tapioca flour (tapioca flour makes the chicken breast smoother and more tender in my opinion.),sesame oil and some shao xing wine. Stir fry the ginger slices until golden brown add in minced garlic til fragrant then add in the marinated sliced chicken stir fry till cooked add in 2 tbsp of spicy bean paste and stir fry til combined. dish up and serve.

I love porridge too...
Don't say it's baby's porridge la, I've eaten in Jap restaurants, their porridge also like this, full of vege and other stuff.

haha but whenever i cooked this my whole family says i'm eating baby food again i've eaten 泡饭 in china it a solid kind of porridge with rice in soup together with vege and etc its delicious too maybe i should make it one of these days.
