The Cupcake That Got Me Swooning

I tend to get very lazy once in awhile so i would always be searching for recipes that requires only a couple of steps and easy steps that doesn't require a mixer lol! yes, i'm really that lazy at times, and by coincidence, i came across this a couple of days ago......


These little pieces are very soft, melt in your mouth texture and during baking the fragrance will waft through your house. So what exactly are these?























































Have you guessed what these delicate pieces are?
They are ............. Vegan Coconut Cupcakes! Everyone knows coconut milk itself makes delicious cakes of all sorts so how could an Asian like me resist them? The best part is of course its Vegan! no butter or eggs hehe! okok i know i am showing my laziness! but everyone gets their lazy bones once in awhile don't we?

Vegan Coconut Cupcakes
(adapted from Chez Bettay The Vegan Gourment with slight modifications)

Ingredients
1 cup fresh coconut milk
1 1/2 cup plain flour
3/4 tsp baking powder
1/8 tsp baking soda
1/4 cup canola oil
1/2 cup sugar
1 cup dessicated coconut

Method
  1. Preheat oven to 180℃. Line a 12 hole muffin tray with paper cups.
  2. Sift together flour, baking powder & baking soda, whisk to combine and set aside.
  3. Add sugar and oil in a medium bowl and whisk together to combine, add in coconut milk and the sifted flour mixture and whisk until batter is smooth and creamy. Fold in dessicated coconut.
  4. Fill paper cups with batter until 3/4 full. Bake in preheated oven for 25-30mins or until slightly golden brown. Cool on rack before serving.

    I've never done a no egg cake before, or even tasted one. But I've heard a lot of such recipes :)

I've done a couple of these vegan recipes before and they actually do taste great some even to the extend of extremely soft texture like this coconut cupcakes got no idea y.. most ppl tends to think that cakes w/o eggs and butter are much denser in texture but its not really true! hope you try something vegan out soon!
