And while buying ingredients for this soup at NTUC Fairprice the word Organic Polenta caught my eye i surf the net on my mobile for the meaning and to my surprise its grounded cornmeal to think i was always skipping recipes with cornmeal cause i have to go quite far to get them haha so we learnt something don't we =D.
Here's the recipe adapted with some modifications from here.
Corn Chowder
Serves 4
Ingredients
1 tbsp olive oil
1 blade of celery stalk, diced
1/2 medium yellow onion, diced
3/4 tsp kosher salt
3 tbsp yellow cornmeal/polenta
2 cups low-fat fresh milk
1 cup chicken broth
2 large potatoes, peeled and diced
few sticks of imitation crab sticks
sweet corn kernels from 2 pieces of fresh sweet corn
Method:
- Process the sweet corn kernels together the chicken broth in a food processor and strain the mixture into a bowl.
- In a medium saucepan, heat the olive oil over medium flame, add the celery,onion and salt, saute until onion is soft and translucent.
- Add the cornmeal/polenta, milk, sweet corn mixture, potatoes and the imitation crab sticks to the saucepan. Simmer for 30mins.
- Ladle into bowls, garnish with parsley flakes and serve hot.Enjoy!
Yes, but lazy food tastes sometimes the best! Great looking chowder!
ReplyDeleteHey, tell you what ... I've not been cooking and baking for the last 2 weeks ... and maybe across the next 2 months too due to my family's relocation. I've been eating like a lazy bum ... HAHA! Just oatmeal, soy milk, honey-roasted nuts, and forgotten what else I've feeding myself with ... LOL!
ReplyDeleteYour corn chowder looks wholesome! Simple and yet nice! I've got some organic polenta, too! Do you know you can make simple mush with polenta, which is simply seasoned with just salt and pepper. Nice! It's a very southern U.S. thingy ... I had this when I was in the States.
