Steamed Banana Cake

Its the weekend again and i just realized that my last post was on Monday hmmm i was really busy this week running errands and working haha... I made something this morning for breakfast its bananas again ok i know i'm incorrigible but i got no choice the bunch of bananas were waving at me from my dinning  and i surrendered =p i think i will have alot of bananas post because my parents are Buddhist and they pray every fortnightly and banana is always in their list of fruits  not that i am complaining though but i hope you readers won't get sick of it =) i found this recipe in my little notebook of recipes but i forgotten to write down where did i got it from please help me to link if you happened to know thanks =)




Steamed Banana Cake
(makes 6 big muffins)

Ingredients

  • 2 eggs
  • 100g sugar (i reduced to 70g)
  • 200g ripe bananas, mashed
  • 150g self-raising flour
  • 1/8 tsp baking soda
  • 75g flavorless oil 


Method

  1. Sift together self-raising flour & baking soda, set aside
  2. In a mixing bowl, beat eggs and sugar till ribbon stage
  3. Add in mashed bananas, beat till combined
  4. Gently fold in flour mixture and oil taking care not to deflate the eggs and sugar mixture
  5. Pour batter in muffin cups
  6. Steam over high heat for 15mins or till inserted skewer comes out clean.
The verdict: fluffy and soft with the aroma of banana scenting my office air lol..


*note: as per my pictures i used paper cups which you can see it's not suitable for steaming the cups seams are all opened up after steaming i will change to muffin trays or silicon molds the next time i do it.
