Its the weekend again and i just realized that my last post was on Monday hmmm i was really busy this week running errands and working haha... I made something this morning for breakfast its bananas again ok i know i'm incorrigible but i got no choice the bunch of bananas were waving at me from my dinning and i surrendered =p i think i will have alot of bananas post because my parents are Buddhist and they pray every fortnightly and banana is always in their list of fruits not that i am complaining though but i hope you readers won't get sick of it =) i found this recipe in my little notebook of recipes but i forgotten to write down where did i got it from please help me to link if you happened to know thanks =)
Steamed Banana Cake
(makes 6 big muffins)
Ingredients
- 2 eggs
- 100g sugar (i reduced to 70g)
- 200g ripe bananas, mashed
- 150g self-raising flour
- 1/8 tsp baking soda
- 75g flavorless oil
Method
- Sift together self-raising flour & baking soda, set aside
- In a mixing bowl, beat eggs and sugar till ribbon stage
- Add in mashed bananas, beat till combined
- Gently fold in flour mixture and oil taking care not to deflate the eggs and sugar mixture
- Pour batter in muffin cups
- Steam over high heat for 15mins or till inserted skewer comes out clean.
The verdict: fluffy and soft with the aroma of banana scenting my office air lol..
*note: as per my pictures i used paper cups which you can see it's not suitable for steaming the cups seams are all opened up after steaming i will change to muffin trays or silicon molds the next time i do it.
