Soy Milk Powder Sponge Cake with Mozzarella Cheese

My second entry to Wendy's Spongecake give away. I wasn't satisfied with my previous results on my Strawberry Sponge Cake so i tried again tonight and they were much better but taste like crepes in my opinon lol but they are well better then my 1st try in terms of texture and appearance.


My pictures taken here are bad as i told you taking pictures in the night in my home is terribly bad sorry peeps!




Ingredients
4 eggs, separated
4 tbsp sugar
2 tbsp plain flour
2 tbsp soy milk powder
mozzarella cheese for fillings

Method
  1. Whisk egg whites with sugar until medium peak. Mix in egg yolks until well combined.
  2. Sift plain flour and soy milk powder over the batter and mixed until well combined.
  3. Warm some olive oil on a frying pan over low heat, add in the batter and cover with lid until the top of the sponge cake starts to bubble, flip over, add some mozzarella cheese on the top then fold the sponge cake into half, flip over again and cook for another 1-2 mins and serve warm.

The pictures look just as good despite being taken at night!...with the oozing mozzarella, it's a winner!

The melting cheese gives these pancake sponge cake lots of extra texture. I think you are too critical with your previous creation. They still look delicious to me :p
