Pandan Cottony Soft Sweet Loaf & Pandan Kaya Jam

I'm extremely happy today its finally the weekend and i managed to bake a successful Cottony Soft Sweet Loaf adapted from Cook.Bake.Love and also made a smooth and fragrant Pandan Kaya Jam last night woahh i only managed to sleep at 1am in the morning but still its worth it i fell asleep with a smile of my face I'm sure of it.

I did not make any changes to Cook.Bake.Love recipe just that i added a few drops of pandan paste during the kneading process and here are the pictures it's extremely soft a must try recipe =D

And now the Pandan Kaya Jam it's full of pandan flavor that my family loves its so so so fragrant haha i know i'm bragging about it but then it's really very yummy you should try it when you are free its take around an hour for the final product.

Pandan Kaya Jam

 Pandan Kaya Jam
 (adapted from Madam Kwong's Kitchen

Ingredients

10 Eggs
450 grams sugar (i reduced to 400 grams as i don't like it too sweet)
20 grams freshly pressed pandan juice (i blended the coconut milk with 1 stalk of pandan leaves around 12-15 blades of pandan leaves and discarded the pulp of the leaves)
500ml coconut milk (i used freshly squeezed coconut milk bought from the market)

Method
Beat the eggs and sugar together with a hand whisk.
Mix in the pandan coconut milk and combine well.
Fill the base unit of a double-boiler with water and bring to a boil add the mixture into the top unit of the double-boiler stirring the mixture every 10 mins until the mixtures becomes a thick consistency.
The whole process will take around 1 hour. Cool the mixture and blend the cool mixture in a blender until smooth.
Store in the refrigeration in a clean bottle with a tight cap. (can be kept up to 2 mths)
