Fine Macha Butter Cake

Taking a break from my CNY goodies baking, i baked this Fine Macha Butter Cake from Florence of Do What I Like after seeing Wen's post on this cake.


I wanted to try this macha powder my sis got back for me from japan, disappointed though the color is not what i expect! Could anyone tell me where can i get very green good quality macha powder in singapore?

Overall the cake is ok to me maybe perhaps i don't really like butter cake? macha taste not prominent, it's really very fine and soft though. Try it out and let me know how did yours went.



Fine Macha Butter Cake
(adapted from Do What I Like and seen on Wen's Delight)

150g golden churn butter
1 tbsp vegetable oil
110g sugar (reduced to 80g)
1/3 tsp salt (omitted)
1/2 tsp vanilla extract/essence
3 eggs
140g cake flour (i used 170g top flour)
15g green tea powder
40g corn starch
1/2 tsp baking powder
5 tbsps whipping cream/milk

Method
  1. Sift x 2 times, cake flour, corn starch, green tea powder and baking powder together. Set aside.
  2. Cream butter, oil, sugar, vanilla and salt until light and fluffy.
  3. Beat in eggs, 1 at a time, beating well after each addition. Add in flour mixture and mix at low speed until well blended. Stir in whipping cream/milk.
  4. Pour batter into lined loaf pan and bake in a preheated oven at 180C for 35-40mins or until cook.

还没试过抹茶蛋糕,应该带些淡淡香香的抹茶味道吧?感谢分享,顺便吃了一片啦。。。很奇怪,颜色不是绿色的哦。。。:)

Joelyn, 是有些淡淡的抹茶味,可是还是有点失望,颜色不够,味道也还好,真不知道发生了什么事!

Hmm, now I know what u mean your green tea powder not green enough. Your bake appears brownish instead. But it still looks nice ;)

i kno what you mean...i love the vibrant colour and flavour of green tea and they're not easy to come by! i got mine from japan...the others i got from aust. are an off-shade of green ><

U try and ask Blessed Homemaker.
Her green tea bakes are always green, and I'm sure she don't use colouring.
She just did a green tea cookie few days back.

Hi Jess,
I had the same problem with matcha powder from Japan as well. A friend of mine told me not to use matcha powder meant for drinking. She used bakeable green tea powder (bought from Phoon Huat) and she has nice green cakes with nice green tea fragrance.

I tried the one from Sun Lik and I quite like the color. My photography skills are not that good, you may want to take a look at my green tea cheese cake.

Hi Jess,

Thanks for linking this recipe to me and trying out it out. I don't think the green tea powder u used is suitable for baking as is more for beverage.

I had tried green tea powder from Japanese supermarket, sunlik, kitchen capers & phoon huat. So far kitchen Capers @ Geylang Bahru is the best one. U can see my green tea chiffon has a very nice green colour and the fragrant of green tea is strong too. You may consider to get some from there if you like green tea bakes.

你的是写着绿茶粉颜色好像是比较深的
你可去烘焙店找看看烘焙用的抹茶粉

Spear i did bought phoon huat green tea powder before but don't quite like the taste so never buy le.

jess, if you dont mind investing, i've tried before green tea powder that's really good quality and green but is really exp. is from meidi-ya (: small silver bottle. if you want, i can snap a photo and send you. or, you can ask the assistant there. they are really helpful (:

i can understand how disappointed it can be sometimes when you expected that to be green, well even if it;s not green, at least you can get to taste the flavour of green tea. But dont worry jess, there are already lots of suggestions from the friends here.

But still looks great though Jess. Looks moist. I tried korean green tea powder before and it worked really well with baking, nice colour and flavour. Not sure if you can get them in singapore. I'm a big fan of everything with matcha too.

Jess, get the green powder from Sunlik, is imported from Japan and very fragrant. My green tea chiffon cake looks green.

hey Jess, the best green tea powder I've tried so far is from Isetan. It sells in small tin cans and costs $6+. Expensive, but it's good stuff. It's fragrant, gives a nice green tinge to my bakes as well. I've tried the one from Phoon Huat, not too fond of it. Tastes artificial and gives a mutated green color.

Ooo...I think some green tea powder are not suitable for baking as mentioned - the color turned out brownish like yours but the cake still looks good. So rich and moist.
Sadly, those that gives vibrant color and flavor are usually very expensive T.T Do share with us when you find a good green tea powder =D

I made this cake before but without grreen tea powder. The texture is really very fine.

I used Phoon Huat green tea powder. The colour of the bake is green but not the exact shape of green I like.

Was that matcha powder especially for making the ice cream or sweets? If yes, they are usually not very green, and not meant to be used in the baking. The cake looks great even it's not green enough. :-))

So strange, mine from Japan and yours from Japan too, how come the colour difference is so great? If you have used 15g matcha, the green should be quite dark. Also, I've read somewhere that if your oven temperature is too high, the matcha will turn brown after bake.

To add on to Angie's comment, yes, there are different types of matcha, for cooking, or baking or for drinking. I always ask my friend to buy the one suitable for baking.

The original green tea (for drinking) is usually not very green as compared to the green tea powder than we use for baking. I suspect the baking green tea is enhanced with food coloring and that's why it is so green...

Hi Jess, I have replied your comment at my blog with the link on matcha that I am using. I think the matcha is suitable for baking, cos it is stated on the bottle. :) hope that helps.

I always have the same pale green colour when baking with my matcha. but i really love the crack on the surface of your cake. It must have risen quite a bit!

Hi Jess!
The "green tea" you'd use is an instant green tea mix developed by Itoen(伊藤园). It's not just green tea finely grinded to powder form but rather, process green tea with dextrin and ascorbic acid added to it as stabilisers and possibly agents for froth flotation from which the tea was processed. If you look closely, you would notice that the "tea" look like nano beady crystals rather than powder.

The green tea powder which some have mentioned at around 6 bucks or so a small tin is Ujinotsuyu Matcha Powder, which is suitable for cakes and pastries. I used it for my macha sables. It has a lucious green hue but be careful with storage as green tea rapidly oxidises when exposed in air and lose their exuburant coloration.
