Dulce De Leche Pound Cake

Dulce De Leche is not a stranger to many of us, the taste the fragrance made us fell head over heels with it. Well most of us love it my family are the first i ever came across who says they don't like the taste and smell so i do not make DDL as often as i like. For those who had never done a DDL before here's the link i found on Wiki its has a series of DDL making methods which i find it very useful.



















The recipe adds in the eggs only at the last step, that's something new to me haha! The cake turn out soft fluffy a definite recipe keeper!

Dulce De Leche Pound Cake
(adapted and modified from Pichet Ong's The Sweet Spot Condense Milk Pound Cake)

Ingredients

250g unsalted butter, room temperature
240g top flour
3/4 tsp baking powder
106g castor sugar, reduced to 80g
1 tsp vanilla extract
239g Dulce De Leche
3 large eggs

Method
  1. Preheat oven to 160C. Butter and flour a 9" x 5" loaf pan, set aside.
  2. Sift flour and baking powder together, set aside.
  3. Beat butter and sugar until light and fluffy, add DDL and vanilla and mix until well combined.
  4. Add the flour mixture and beat until no traces of flour remains.
  5. Beat in eggs 1 at a time, beating well after each addition.
  6. Scrape batter into prepared pan and smooth the top. Bake in preheated oven for 60mins or until a skewer test comes out clean.
  7. Cool completely on wired rack before unmolding, serve as desire.
