Easy Stir 'n Bake Banana Cake

I love bananas i never get tired of baking them regardless of whether its chiffon,muffins or cupcakes i love them all I'm constantly looking out for new banana recipes to try them out and each different recipe that i found never fail to disappoint me =). So here's another of my recent bake on bananas its very easy no electric mixer needed all you need is a spatula or wooden spoon to mix and voila a soft moist banana cake is born.

Easy Stir n' Bake Banana Cake 
(adapted from Easy Stir n' Bake Cakes by Kevin Chai)

Ingredients
  • 125g plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3 eggs
  • 125g caster sugar
  • 100ml vegetable oil
  • 200g banana flesh (mashed)
  
Method
  1.  Grease and line a 10cm x 20cm (4 x 8 inches) loaf pan. Preheat oven to 170C
  2. Combine flour, baking powder and soda in a mixing bowl
  3. Combine eggs, sugar and oil. Stir into flour mixture together with mashed banana until well blended
  4. Spoon mixture into prepared loaf pan. Bake in oven for 30-40 mins. Turn on to wire rack to cool 

Note: its better to grease and line the loaf pan to prevent over browning at the sides and bottom of the cake and because i'm lazy to line i got myself an over browned cake which i had to trim off the bottom and sides as my family complained its bitter only the inside of the cake is soft and sweet.

Yes, I love anything banana too! Except though I don't eat the fruit on its own because it's starchy. Haha! Yea, I love making quick bread too. Easy and quick, with promising result, providing that I don't screw up the recipes lar ... Haha!

Thanks for following me! I totally wasn't expecting that! Haha! Glad that you did; otherwise, I wouldn't have been able to find you here! Somehow, when I read that you're a full-time working lady, man, I could totally empathize with you. I'm so worn out by the tight schedule and tiring life of the city. =( I think Singapore doesn't have bad traffic congestion problem like KL does. KL-ites waste so much time getting stuck on the road. *Sigh*

Hiii Pei-lin, greetings from singapore as well and me too =DD i guess we got the same taste buds i dun eat bananas on its own as well i dun like the the starchy taste as well.

Oh i did failed somewhere with the steamed banana cake i did a couple of weeks back my bf and dad made plenty of noises with the cake being too sweet too heavy i really did not know where did i go wrong i just followed the recipe til now i'm still wondering what happened during the steaming process or mixing process. =(

Anyway in singapore its almost the same as in KL i guess i tink its ben almost a decade since i last stepped into KL and nope i never been to the Twin Tower that i heard ppl gushing abt lol i guess i'm more like 山上姑娘 mountain lady. And Singapore does has congestion problems like KL with more and more cars ard nw even Public Transport are jammed - (with humans) lol so i chose to stay at hm and bake =D

i love your blog and all others out there i really admire all of your baking/cooking skills and creativity. Thanks for popping over it was my pleasure knowing you.
