The number of times i have baked banana cakes couldn't even compare to this banana butter sponge that i had baked tonight.. the title truly lives up to its name spongy like cotton, moist and of course the fragrance of banana i couldn't resist popping 2 delectable pieces into my mouth just before i ate my dinner haha and yes you got it right i ate very little for dinner but it's worthwhile i can tell you that! Banana lovers please grab the ingredients and start baking these!
Banana Butter Sponge
(adapted from Alex Goh Fruity Cakes with modifications)
Ingredients
90g sugar
4 eggs
120g plain flour
1/2 tsp baking powder
200g mashed bananas mix with 1/4 tsp baking soda
85g melted butter ( i used vegetable oil)
Method
- Using a electric beater whisk sugar and eggs until light and fluffy, add in plain flour and baking powder and whisk till combined.
- Add in banana mixture and mix till combined.
- Stir in melted butter/vegetable oil in the above mixture until well blended
- Spoon mixture into paper cups and baked in a preheated oven at 180 deg Celsius for 20-30mins or till golden brown.
- Cool and serve.
