Green Tea Chiffon In Paper Cups With Green Tea Cream


Another bake from the book of Keiko Ishida! So soft and fluffy it literally melts in your mouth and i also adapted Jessie of Hearty Bakes Hokkaido Chiffon as i never baked chiffon in paper cups before and i must say they turn out pretty well. The cream goes really well with the cake oh how i love green tea and the color green haha. Now lets enjoy the pictures of green!





Green Tea Chiffon In Paper Cups With Green Tea Cream
(adapted from Okashi by Keiko Ishida with slight modifications)

Ingredients
70g cake flour
10g green tea powder
5 egg yolks
20g castor sugar
70g fresh milk
60g vegetable oil

Meringue
5 egg whites
90g castor sugar
1/4 tsp cream of tartar

Green Tea Cream
250g whipping cream
7g green tea powder
1 1/2 tbsp castor sugar

Method
  1. Preheat oven to 160 degrees celcius.
  2. Sift flour and green tea powder twice. Combine egg yolks and sugar in a bowl and mix well. Add milk and oil and blend together. Add flour and green tea powder mixture and mix until batter becomes sticky. Set aside.
  3. Make meringue. Mix the eggs whites and cream of tartar together until foamy. Add half of the sugar and continue beating for a few mins, then add remaining sugar and beat until stiff peaks form.
  4. Add 1/3 of meringue into egg yolk mixture and fold in lightly, then add remaining meringue and fold to incorporate completely.
  5. Divide batter into paper cups and bake for 20mins or until golden brown. When cake is done remove from oven set aside to cool.
  6. Make green tea cream. Combine ingredients in a clean bowl then pipe the cream using a nozzle into the cooled cakes.
  7. Chill at least 30mins in the fridge before serving. Enjoy!

Very nice, your chiffon just fit perfectly in the paper cup. Did you fill full or 80% full of the batter to the cupcake? I tried baking earlier, it shrink :(

DG i filled it to 90% full so when they shrink it would not be so obvious.

That's a great idea to fill the cup 90% full to avoid obvious shrinkage. thanks for sharing. I loves the green tea cakes, looks very light and refreshing!

Actually I am aiming for this book but didn't buy because of the price. After reading ur review I think it's worth the price, will get it next time I go to bookstore.

Angel actually i also hesitated for a couple of weeks before buying keiko book lol i like you think the price was to expensive but after buying the book n trying out the recipes its really worthwhile no kidding!

hee ann please do i tink i will be baking more stuffs from the book of keiko her recipes are too gd to be missed... i got the toaster pic at photo bucket there are quite a few designs.

Love chiffon and I almost thought it was pandan-flavored. I have to taste it to know it is actually green tea :P

I've never baked chiffon in paper cups! I'll have to try it some time! I love chiffon cake- and yours looks so light and fluffy =) I love matcha flavour but I've never really looked for it here because I'm the only one in my family who likes green tea flavour =(
